Brilliant, yellow gold. Classic varietal characters of lime zest and an underlying slate has developed beautifully and integrated over 7 years in bottle.
The fruit was picked in two batches in mid and late February, early in the morning, to keep the fruit as cold as possible. Only the free run juice is used to produce pristine juice high in acidity without phenolics. The juice is fermented in stainless steel with a neutral yeast and temperature control to preserve aromatics.
Vintage in 2014 provided warm dry conditions before cooling in the ripening period. These conditions produced an elegant wine, with varietal character and crisp acidity. Enjoy now with freshly shucked oysters, or flash fried salt and pepper calamari.
