Production Notes

Description

Made in the Burgundian style from our best parcels of Chardonnay fruit. Barrel fermentation in French oak cask and puncheons with weekly stirring of the yeast less provides a wine of complexity and significant aging potential.

Winemaker Notes

The fruit was harvested in February and barrel fermented in a mix of new and old French oak puncheons 500L capacity. The wine then spent a further nine months in barrel with regular lees stirring to enhance the texture and mouth feel.

Tasting Notes

A soft, full and rich peachy palate which champions a typical stonefruit Chardonnay fruit profile. Subtle barrel fermentation provides good oak depth with vanilla and roast hazelnut flavours on the textured finish.

Cellaring & Serving Suggestions

Cellaring:Slightly more restrained and elegant than previous vintages, this wine is perfectly integrated for enjoyment now or reward yourself with cellaring for a further year or two.

Serving Suggestions: Try with a rich twice baked goats cheese souffle, rocket, walnut & pear s salad. Alternatively match with roast chicken and mushroom linguine.
